Barbecued prime rib: the ultimate recipe !

The melt-in-your-mouth, fragrant prime rib is a favourite at the BBQ. But beware: when preparing it, don't choose a recipe at random! Do you want to reinvent yourself and use your imagination with an original BBQ dish? Stimulate your guests' taste buds with a recipe that breaks the routine and makes you the grand master of prime rib. Find out how.

Crusty prime rib

For an original recipe, here's a method that will make your prime rib crispy on the outside and melt in your mouth. An explosion of flavours in the mouth guaranteed!

  •   Step 1: Before cooking
  1. Take the meat out of the oven about 2 hours before cooking.

  2. Massage it with a little olive oil.

 

  • Step 2: During cooking
  1. Bring your LULU or MARCEL up to temperature 😉
  2. Once your grill or plancha is hot, place the rib of beef on top.
  3. Sear each side of the meat hard, including the slices: the aim is to quickly create a crust to trap the juices inside.
  4. Stew the meat, covering it with your cooking dome.

The time varies between 5 and 15 minutes on each side. It all depends on the thickness of your piece and your cooking preferences; it's up to you!

 

  •    Step 3: After cooking 
  1. Let the meat rest for 10 minutes under aluminium foil. This is essential for the juices to spread through the meat and give you a soft rib.  
  2. Add a small handful of coarse salt, a few turns of the pepper mill, and serve!

Vary the pleasures of the side dishes

Is your prime rib perfectly cooked and in the spotlight? Don't forget to take care of your side dishes. To impress your friends and family, leave out the traditional potatoes: innovate with a corn cake and gruyère cheese, for a flavour that is both crunchy and melting. Or why not opt for sweet potato fries, for a special flavour?

Another suggestion: serve tomatoes à la provençale, aubergines, asparagus or grilled peppers, also cooked with your LULU or MARCEL. 

And for a sauce that breaks the rules, why not opt for an Asian-style sauce? Sweeter, but just as tasty! Replace the olive oil with sesame oil, then make a sauce with shallots, a sachet of miso soup, soy sauce, rice alcohol and gin. Serve it with carrots and white cabbage for a surprising dish.
